Grown at 1400-1500 meters above sea level, this Mexican Chiapas is one of the most complex lots we've seen in Cupa's lifetime come out of the region. A mix of Typica, Bourbon, Marsellesa, and Costa Rica 95, this coffee offers a balanced yet pleasantly sharp cup for the drinker to enjoy.
In a cup, we taste flavors of bakers chocolate, lemon zest, green apple, and sweet caramel. We recommend this coffee for espresso, at a 1:2.5 ratio of coffee to water. You will notice the acidity of the lemon and green apple first, followed by the sweetness of caramel, and finishing off on a crisp bitterness of baker's chocolate.
