Simmer is a pause between the chaos of a rolling boil and the stillness of a standstill, a balance of restraint and power. It holds the promise of something greater, the quiet before a crescendo. It’s where flavors meld, ideas brew, and possibilities unfold, not in a rush, but with purpose. 


Simmer is an intimate moment of creation, slow but deliberate, quietly asking you to wait just a little longer.

What Is The SIMMER Collaboration?

"We decided to create a product for our community of coffee people. The kind of product we want to buy. Something slightly off the beaten path.

Our first blend, Simmer, is different. A wet hulled, anaerobic, co-fermented, double washed, and infused coffee. A coffee that doesn’t taste like coffee. Not artificial - but something so sweet, so complex, and so close to the boiling point that you can’t help but bubble with excitement. At least… we are."

For the discerning barista and the passionate coffee enthusiast, we are proud to present a blend that stands out for rarity and craftsmanship: SIMMER. This limited release is the result of a unique collaboration between two of Orlando's most dedicated roasters: CUPA and One Off.

This blend features a Sumatra Anaerobic Lychee Coferment Wet Hull, a coffee that undergoes a rare and meticulous fermentation process, imparting it with complex floral and juicy flavor notes. Paired with a Colombia Panela Sticky, known for its rich, syrupy sweetness and vibrant acidity, this blend is a true celebration of innovative processing methods.

Both coffees have been thoughtfully roasted separately, to highlight their individual and collective profiles, coming together to create a blend that is as distinctive as it is harmonious.

Where Can I Buy The SIMMER Blend?

You can order your bag of the SIMMER Blend directly from the One Off website, or from the CUPA website. This blend is only available in limited quantities, for a very limited time. Both Single Origin coffees that make up this blend will also be available for purchase, on each roaster's website as well.

How Should I Make SIMMER At Home?

We recommend SIMMER be brewed as a pour over, at a 1:14 ratio of coffee to water, using 195 degree (F) water, with a final brew time of 3:30. We liked the brews of a v60 and a Kalita Wave, although a French Press or Aeropress would accentuate the body and intensity of the flavors found in this blend even further. We ground the coffee to a medium fine level, and created a crater in the middle of the brew bed to encourage even extraction and water flow during the brew. After the bloom, we recommend stirring the brew bed to add agitation to the brew, enhancing extraction even further. In a brewed cup, the drinker can expect flavor calls of Rose Water, Lychee Candy, and Honeydew Melon.

If you are an adventurous espresso drinker, we think you should absolutely go for it using SIMMER. We dosed the espresso at a maximum dose of 20g, with a 5 second pre-infusion before fully extracting the coffee. We used a standard 1:2 ratio of coffee to water for this recipe, pulling around ~25 seconds, and got incredible results: Intense sweetness, bright acidity, and heavy body. These tactile experiences ultimately helped us form the flavor calls we found when brewing. In a cup, we tasted Rose Hips, Lychee Soju, as well as an intense flavor of Honeydew HI-Chew. This coffee would pair very well with milk, creating an even sweeter cup of coffee when drank.
